Elephant garlic (Allium ampeloprasum) is truly a giant bulb that looks like traditional garlic, but it belongs to the onion genus and not Allium sativum. It is more closely related to a leek than to garlic. It has a flavor milder than garlic and isn't usually substituted for garlic when cooking as it doesn't have a traditional garlic flavor. It can be eaten raw, sauteed, or roasted. If roasted or baked, it can be used as a spread with butter on toast. It has a higher moisture content than traditional garlic.
